Got some leftover BBQ chicken?
This is a great Annette Sym recipe.
Ingredients
BBQ Chicken
1 pkt Cream of Chicken soup mix
1 1/2 cups of skim milk
1/2 cup water (stock optional)
Mixed frozen vegies (500 grms)
1 x Onion – diced
1/2 teaspoon basil
Method
Remove all the skin and then remove all the flesh from the bones.
Place vegies with onion in a saucepan and cover with boiling water.
Cook for 5 mins – Drain and set aside. Keep 1/2 cup of stock?
In the same saucepan combine the milk, soup mix and basil – bring to boil
Add the vegies and the chicken and mix. Cook for further 3 mins.
Add stock/water if too thick.
Serve with rice, pasta or potatoes.
